My Morning Scrambled Egg Muffins
Total Time: ~20 minutes to make (5-10 minutes prep, 7-10
minutes to cook)
Ingredients:

Eggs: (example) 4 makes 7 muffins
v
Meat: Turkey Sausage or turkey bacon
v
Spices: Pepper and cinnamon
v
Dairy: 2% Shredded Cheese (any blend)
Directions:
1.
Preheat oven at 350. Cook meat in the microwave
or oven
2.
In a large bowl, beat eggs. (Optional- add in onion, green pepper). Add
in pepper, cinnamon, cheese, and meat.
3.
Coat a 12-cup muffin pan with cooking spray or
line with cupcake liners
4.
Pour in 1/3 cupfuls into a prepared cup. Bake
until their tops are lightly browned. Let them cool in the pan for 3 minutes
before serving.
